Biryani originated in Persia and took couple of different routes to arrive in India This delicacy which can be prepared with meat, fish, or vegetables and rice flavored with saffron. Biryani can be prepared in various ways, each with its own uniqueness. The spices and the quality of rice used in Biryani are what primarily contribute to the taste. Usually cloves, cardamom, cinnamon, nutmeg, sweet sticks bay leaves etc are some basic spices used in Biryani. The premium varieties also include saffron and dry fruits. For a non-vegetarian Biryani, the main ingredient that accompany the spices are Mutton, chicken, Beef, Prawns (Shrimps) etc. Biryani is generally served with yoghurt based vegetable salads and chutneys.
Preparation
- Rinse 1 cup of rice and drain well.
- In a heavy saucepan with a lid, combine rice with 2 cups (500mL) of water and a pinch of salt.
- Bring to the boil, reduce heat to medium, and simmer covered, until tender (about 20 minutes).

This tasty Sushi Rice is to make all the different kinds of sushi. Sushi is vinegared rice, usually topped with other ingredients, including fish, various meats, and vegetables. This Sushi rice is unique for its ability to bind together and form the backbone to various types of sushi.
Preparation
- 4 cups uncooked Sushi rice
- 4 cups water
- 1/2 cup seasoned rice vinegar
Bring rice and water to a boil in a medium saucepan. Cover, reduce heat, and simmer 15 minutes. Remove from heat; let stand, covered, 15 minutes. Place rice in a large bowl, and gently stir in rice vinegar with a spoon until combined. Cover rice mixture, and let rest 30 minutes.
Makes about 4 cup servings

Arborio rice is one of the key ingredients of Northern Italian cuisine. This is the rice to use for making risotto. The center so each Arborio grain is called the "pearl". In the final phase of cooking risotto, the pearl opens to yield a creamy delicious rice dish. Arborio can also be used to make paella and many other rice dishes, including desserts.
Preparation
- 1 Cup Arborio Rice
- 4 tbsp olive oil or rapeseed oil
- 1/2 sweet onion, chopped
- 1/2 sweet yellow or orange pepper diced
- 3 cups of chicken or beef stock, heated in a pot
- 4 oz. fresh Italian Parmesan cheese
- Salt & pepper to taste
Over moderate heat, sauté Arborio rice, chopped onion and sweet pepper in oil, until moderately brown. Ladle hot stock into rice, one ladle at a time, and stir until the liquid is absorbed. Add more stock, stir. Do this until all stock is used and absorbed. Taste rice for tenderness. If stock is used up and the rice needs more cooking, add small amounts of water and stir until rice is tender, moist, and creamy. Stir-in parmesan cheese. Serve immediately. Adjust seasoning to taste. A drizzle of good extra virgin olive oil adds a rich finish.
Makes about 4 cup servings
